15 minute hawaiian chicken salad bowl
Foods and diets always travel in trends. But this ‘food bowl’ concept is one I can really get behind. Some call it a salad but I’m sticking to a food bowl and distinguishing the two by number and layering of toppings. But, to prevent confusion, we’ll combine the two and call it all delicious just like in the case of this 15-minute Hawaiian chicken salad bowl.
Layers of greens with spiralized sweet potatoes {my favorite thing ever… but seriously}, plump cherry tomatoes, avocado, grilled and marinated pineapple and chicken. This recipe proved I don’t marinate my meat enough. You forget what that extra 30 minutes can do for the flavor!
The better news, this grilled Hawaiian chicken salad bowl can be prepped in advance. Literally, every component can be prepped in advance making this a simple 15 minute meal {or however long it takes to grill that chicken}. Here’s how to prep it:
the prep guide
- For the greens: soak and dry full heads of romaine. Chop and place in a baggy with a napkin to absorb leftover moisture.
- Make marinade for chicken in a zip-lock baggy and then add chicken. Let marinate until ready to use.
- Place pineapple from can in separate bowl to grill when ready.
- Make dressing and store.
- Spiralize the sweet potatoes and store in baggy or continue with the cooking process and reheat day of.
Just five steps taking less than 20 minutes to prep. Once everything is prepped and ready, place in the refrigerator for a quick and easy home-cooked meal during the work week. All you have to do night of is grill the meat, cook the sweet potatoes {if you haven’t already}, chop the greens, slice the tomatoes, avocado and red onion and there you have it. A fresh, delicious, wholesome and nutrition meal on your dinner table in just 15 minutes.
If you don’t have a spiralizer yet, feel free to use chopped and roasted sweet potatoes. I will tell you however, the spiralizer will change the game for you! Hands down it blows all other forms of sweet potatoes out of the water. Well maybe except for this sweet potato gnocchi…. but still worth the small investment it is!

15 minute Hawaiian Chicken Salad Bowl

INGREDIENTS
- MARINADE
- 2 Tbsp tamari sauce {soy sauce}
- ⅓ coconut milk
- ¼ cup pineapple juice {from can, save pineapple}
- ¼ cup orange juice
- 1 Tbsp tomato sauce
- 3 garlic cloves, minced
- 2 Tbsp cilantro, chopped
- SALAD
- 4 chicken breast halves
- Pineapple pieces {from can}
- 6-8 cups chopped romaine
- 2 avocados
- 1 cup cherry tomatoes, halved
- ¼ red onion, thinly sliced
- 2 sweet potatoes, spiralized
- 2-4 Tbsp coconut oil
- DRESSING
- ¼ cup pineapple juice
- 3 Tbsp red wine vinegar
- ¼ cup olive oil
- salt and pepper
INSTRUCTIONS
- Make marinade by mixing all ingredients in a zip-lock bag. Add chicken breasts halves and let sit 30 minutes to 48 hours.
- Make salad dressing by adding all ingredients to a mason jar, screw on lid and shake until mixed well.
- Spiralize sweet potatoes and heat a cast iron skillet over medium heat. Add coconut oil {or olive oil} and cook stirring occasionally until tender and slightly crisp. About 10-15 minutes.
- Meanwhile heat grill and grill chicken and pineapple chunks in grill basket.
- Chop romaine lettuce, slice red onion, avocado and tomato.
- Begin making the bowls by adding lettuce, tomatoes, onions, avocado and tossing with dressing.
- Finish by adding sliced grilled chicken, spiralized sweet potatoes, and grilled pineapple.
- Enjoy!
